Easy Peasy...

The snow is falling furiously, and the wind is blowing...which means drifting snow...but that's okay. Thank You, Lord, that everyone is safe and warm here at home.

Like many, being "snowed in" makes for lots of time in the kitchen. I love being able to use my Crock-Pot. One of my favorite recipes for the Crock-Pot comes from Fix-It and Forget-It~Feasting with your Slow Cooker. So easy peasy!

Easy Chili

~makes 10-12 servings

1 pound ground beef
1 onion, chopped
1 green pepper, chopped
1 1/2 teaspoons salt
1 tablespoon chili powder
29 ounce can tomato sauce
3 16 ounce cans kidney beans, drained~I use dark beans
14 1/2 ounce can crushed or stewed tomatoes
6 ounce can tomato paste
2 cups grated cheddar cheese
  • Brown meat in skillet. Add onion and green pepper halfway through browning process. Drain mixture. Pour into slow cooker.
  • Stir in remaining ingredients except cheese.
  • Cover. Cook on high for three hours, or on low for 7-8 hours.

We love to eat this chili with Jiffy cornbread, cheddar cheese, and sour cream.

I hope you are warm and safe wherever you are. We're in a blizzard warning for today, so I don't think we'll be going anywhere! ;)

We love Chili! I hope you're getting along OK in the snow! I can't imagine 2 feet! We had a record snow storm here on Christmas eve, but I think it was only 14 inches. Stay warm!

Yum! We had chili last week, or I would have it again this week. We eat ours with Fritos.

We are snowed under, also. This is unusual weather for Arkansas. Hopefully we can get out tonight to go to church...it is crazy hair night at AWANAs and I will be sad if I have 4 little ones with green and purple hair sitting at home.

Mmmm. Love chili! Mr. G made it a couple of weeks ago and we made frito pies. It was so good. I am going to try and talk him into making it again soon!
How is the snow? None here but it is cold and gloomy.
